What's the Risk of Light Intrusion?

Light intrusion during the fermentation process can be detrimental to a beer’s quality and finish. Light intrusion can develop off-flavors and degrade hop compounds. Ultraviolet (UV) light, present in natural and artificial light sources, can initiate a chemical reaction in beer known as “light struck” or “skunked” beer. This reaction occurs when UV light interacts with the isomerized alpha acids from hops. This produces sulfur-containing compounds that give the beer a skunky aroma. This issue is particularly relevant during the fermentation stage when the beer is exposed to light before packaging.
